Well friends, Halloween has come and gone. It was so fun watching all the kids, big and small, in their amazing costumes. I was concerned we wouldn't get many Trick or Treaters because we've been having some stormy weather over the past week or so, but it worked out! Now, we're beginning to prepare for Thanksgiving!
I love Thanksgiving because it involves some of my favorite past times, spending time with my family and food! I know the holiday can have some negative conditions, and I very much agree that it is one of our more problematic holidays, not trying to get political, but I do think that the majority of us can agree that things didn't play out exactly the way we were taught in elementary school.
That said, I have ,"taken back" the holiday as a time to be thankful and grateful for how far we've come, for the people I am surrounded with, for the opportunities that come my way, for the health and safety of those I love, AND of course, as an excellent excuse to gorge myself silly on pumpkin pie.

Speaking of loved ones. Here is my Nannie's famous chocolate meringue pie recipe <3:
1 9 inch deep dish pie crust, baked
Filling:
1 1/2 cups sugar
5 tablespoons cocoa
4 tablespoons all-purpose flour
1 12 ounce can evaporated milk
4 egg yolks
2 teaspoons vanilla flavoring
4 tablespoons butter or 1/2 stick
Meringue:
4 egg whites
2 tablespoons sugar (you can adjust this according to your taste)
In a large bowl whisk together the sugar, cocoa, flour, milk, vanilla and eggs. Cut butter into about three pieces and add to the mixture. Cook on top of the stove on medium high heat, stirring constantly for around 9 to 10 minutes until thick. Once the mixture is cooled, add it to the pie shell to slightly cool before adding the meringue. While waiting for your filling to cool down a bit, then you should start making your meringue.
You will need to beat the egg whites with a mixer until stiff peaks form. Add sugar and beat for around 1 minute. Spread on top of the pie and bake in 350 degree oven for 10-12 minutes until the meringue has browned.
